Cheese, Mushroom and Spinach Stuffed Pasta Shells #Recipe

For some reason I waited 32 long years to try stuffed shells.  The other month I saw them on a blog and thought, hmm, these look good.  Since then I've experimented with a variety of mixtures including a  cheese/spinach blend, cheese/spinach/turkey, and cheese/spinach/mushrooms.  I think the last option is my favorite.  You can also prepare these and freeze to cook at a later date.  I haven't tried the freezing so don't take my word for it!

big pasta shells, cooked and drained
1 pound mushrooms, chopped
1 medium onion, chopped
4-6 cloves garlic, minced
1 package frozen chopped spinach
16 oz. ricotta cheese
8 oz. shredded white cheese of your choice
1 large jar of pasta sauce of your choice

I start the shells cooking while I work on the rest of the prep.  Drain and let cool.
 Chop mushrooms, onions and galric.  I saute in a big wok with a tablespoon or two of olive oil.  Typically I sprinkle in some salt, pepper and Italian seasoning.

Toss in your chopped spinach and cook through.
I let mine cool a little then mix in the ricotta right in the pan (I'm lazy - less dishes to clean) along with maybe 8oz of shredded motzarella cheese.

Stuff your pasta shells.  This makes quite a big batch - probably a 9x13 inch pan but it works really well as leftovers for lunch.
Last but not least, pour red pasta sauce aroung the shells and cook for about 45 minutes, covered with foil, at 350 degrees.  I forgot to take a picture of the finished product because we were starving and had to eat.  Enjoy!

    I always love stuffed shells when I have them made FOR me, but I've never thought maybe I should give them a try. It actually looks pretty easy. I think I better test them out :)
