Roasted Broccoli, Red Pepper and Pasta Salad #Recipe

Long ago I came across a roasted broccoli and pasta recipe that was delish.  I thought I had saved it in my stack of recipes but it was nowhere to be found.  I found some variations online that called for lemons but alas, all I had was a lime.  Here's my version - it turned out yummy!  Roasted broccoli has a very distinct flavor - I am definitely a fan!

1 large broccoli head, cut into 1-2 inch pieces 
2 tablespoons olive oil
salt & freshly ground black pepper
1 lemon or lime 
2-4 tablespoons pine nuts
1-2 cups cooked pasta
1 small jar of roasted red peppers, cut into slices or squares

Toss broccoli and garlic with oil, salt and pepper in a large bowl.  Sometimes I add the lemon juice here, other times after - depending on how lemony you like it (roasting the lemon juice will tone down the flavor).  Arrange in a single layer on a baking sheet.

Toast at 450 degrees for about 12-15 minutes, turning once or twice.  Let cool.

Meanwhile, cook and drain a pasta of your choice.  We like the mini bow tie pasta - easy for kids to eat.

Chop your roasted red peppers and let drain very well.  I leave on a cutting board propped up by a plate and let it drip into the sink.

Mix with pasta, roasted red pepper and broccoli in a bowl with your pine nuts.  Chill and serve.  Add additional salr and fresh ground pepper to taste.
This recipe is a great side dish or lunch salad.  Enjoy!
