I've always been somewhat afraid of bok choy. It seems so foreboding. I mean look at it! How do you cook or clean it? After my first attempt, I can tell you it is actually easy and the results were delicious.
Rinse the bok choy well. Cut off the base - about half and inch or so.
Separate the ribs and wash each one in the sink. Then chop into 1 inch pieces. Next time I will probably chop them into even smaller pieces. Heat some olive oil on medium high heat in a wok. Toss in the bok choy, salt and fresh ground pepper and cook. Enjoy as a side. Next time I think I will chop it into smaller chunks that what is pictured below.
