Chicken Soup #Recipe - Easy and Delicious!

This is a very easy chicken soup.  I like to make it on weekends and use as leftovers.  I made a huge pot because I have a tendancy to over cook.
meat from 1 rotisserie chicken, skin and bones discarded
5-7 celery stalks, choppped
1 large onion, chopped
7-10 large carrots, chopped
2-3 cloves garlic
32 ounces chicken stock or water
olive oil
salt and pepper to taste

Shred your chicken.


Chop your veggies. 


Heat olive oil on medium high heat and toss in veggies.  I like to sear them just a little before adding the garlic and broth.

Simmer untill everything is tender.  Serve over rice or pasta.  Enjoy!
