Chicken Breasts With Red Pepper and Potato Ragout #Recipe

This recipe is adapted from Everyday Food magazine from a few years ago.  It was so good I only changes some of the original components.  Makes a delicious, colorful meal.  The prep time is lengthier than I would like but the results are delicious!

splash of olive oil
4 boneless, skinless chicken breasts
salt and fresh ground pepper
2 medium red onions, cut in 1-inch chunks
3 bell peppers, cut in 1 inch pieces
1 pound red potatoes, cut in one inch pieces (skin on so pick the "pretty" ones!)
1 pint grape tomatoes, cut in half
2 cups whole fresh parsley leaves, stems removed (I think flat leafed parsley works better that what I used this time around)

Prep your vegetables.

Heat a splash of olive oil in a wok.  Add chicken breasts, season with salt and fresh ground pepper.  Cook in skillet for about 15-20 minutes until cooked through.  Set aside on a plate.


Add onions, peppers and 1/2 cup of water to the skillet.  Cover and simmer until potatoes start to soften, about 10 minutes.

Add back the chicken and toss in grape tomatoes.  Cook about 5-10 more minutes.


Stir in parsley and serve.  Enjoy!
