Cucumber, Tomato and Quinoa Salad #Recipe

This is a fresh and easy side dish (great with fish) or vegetarian meal.  I have tried some variations with tabule, couscous and gluten free quinoa.  All were a hit!

1.5-2 cups of couscous, quinoa of tabule grain cooked and cooled
1 cucumber, peeled and diced finely
1 tomato, diced finely
fresh parsley or cilantro
juice of 1 lime
fresh ground pepper
sometimes I add a splash of olive oil

Dice your vegetables.  Cook your grain and let it cool completely.  Mix everything together and enjoy!  I often chill before serving.

    Your picture is very pretty. A lot of recipes I read about on Mom Blogs sound good, but the pictures don't look very appealing. It's hard to take a good food picture.

    Thanks for this, because I know I'm going to innudated with ripe tomatoes and cucumbers I hope in a week or two and I'm looking for recipes for them.
