Chicken and Red Pepper Stirfry #Recipe

I love to have a homecooked meal on week days, but that takes some planning ahead with our busy schedules.  This dish was one I prepped on Sunday and was able to cook during the week.  Easy, healthy and delicious.

2 red bell peppers, sliced thinly
1 medium onion, cut into 1-inch pieces
1 pound chicken, sliced thinly
4-6 cloves garlic
2 tablespoons peanut oil
1 tablespoon paprika seasoning
1 teaspoon ginger seasoning
cooked rice of your choice

I chopped and marinaded the chicken in the peanut oil, salt, pepper, paprika and ginger seasoning.  I let this sit about 2 days until I was ready to make the meal.

I cut my red bell peppers into strips and stored in the fridge.

The night I was finally able to make this meal, I only had to chop the onion and make the rice.  I've often made rice ahead of time but it dries out quickly so I prefer to make it fresh.
