Easy Potato Salad #Recipe

This is a wonderful side for BBQ parties.  I prefer to add more sour cream than mayo or miracle whip because it has a lighter flavor and doesn't overpower the salad.

red potatoes, cut into 1/4 inch pieces and boiled
6-8 hard boiled eggs, peeled and coarsely chopped
1/2 small onion, finely chopped (I like vidalia or red onions)
1/4 light cup sour cream
2 tablespoons light mayo or miracle whip
2 tablespoons deli mustard

Boil potatoes, drain and let cool.  Boil eggs, cool, peel, chop and mix with potatoes.  Add fresh ground pepper and salt to taste.

My favorite "sauce" ingredients.


Chop an onion very finely.  I prefer to use purple for the nice pop of color but I was stocked with Vidalia onions I needed to use.


Mix sour cream, mayo and mustard.  I use 3 parts sour cream and 1 part mustard and mayo.  You may prefer a different combo so experiment in the bowl prior to adding to your potatoes and eggs.


Yummy!


The final product.  Keep chilled until serving.
