This recipe makes about 60 cookies. Ironically, these are relatively healthy at around 60 calories a pop. Next time I might try to reduce the amount of sugar and see if they still come out as delicious.
2 1/2 cups walnut halves, finely chopped
3 cups confectioners' sugar
1/2 cup unsweetened cocoa powder
dash of salt
4 egg whites
1 teaspoon vanilla extract
Chop your walnuts into small pieces.
Mix sugar, salt and cocoa powder in a bowl. Separate your eggs.
Add eggs and vanilla to bowl, mix with a spoon until moist.
Drop 1 to 2 inch clumps on a baking sheet lined with parchment paper. Bake at 350 degrees for 15-18 minutes, until the tops are cracking and cookies have risen nicely. Cool and enjoy!
