Pulled Pork, Pickle & Olive Quesadilla #Recipe

I had seen a variation of this recipe in Everyday Food years ago but lost the issue so I recreated it from memory.  I recall it called for red onions and did not include black olives, but I have an olive-lover of a 3 year old and this was her dinner so here goes.

I used my absolute favorite flour tortillas for this recipe - Tortilla Land flour tortillas with all natural ingredients (wheat flour, water, canola oil, salt and sugar - nothing else!).  They come raw and you cook them in a pan for about 60 seconds on each side.  At first I was none too pleased by the extra time I needed to spend to cook these but after my first bite of the tortilla - I am sold.  Never again can I settle for store-purchased, dry, stiff tortillas.  Our entire family loves them, sometimes eating them solo as a snack.

Anyway, back to my recipe.  The main ingredients are below.  I would use deli mustard instead of yellow but Lily prefers the more mellow taste of yellow so that is what we went with (it IS her dinner, after all!).

Mozzarella cheese
Pulled pork
Sliced dill pickles
Black olives
Mustard


Spread your tortilla with a layer of cheese


Cover with shredded pulled pork and olives


Add pickle slices.  Trust me on this.  You'll love it...well, if you like pickles you'll love them!  If I had red onion I would have added some slivers, too, but I was all out.


Cover with another layer of cheese.


Spread mustard on the other tortilla.


Cook and serve with your favorite quesadilla toppings.  Ours are sour cream (reduced fat, of course!) and a corn and black bean salsa.  Enjoy!
