Shrimp Gumbo with Okra, Bell Peppers #Recipe

I had a lot of fresh okra and decided to try a new gumbo recipe.  It turned out delicious and flavorful.

2 pounds medium shrimp - peeled and deveined
Cajun seasoning (I like Zatarain's Creole Seasoning or just plain Old Bay)
1/4 cup olive oil
2 pounds chopped okra
1 tablespoon tomato paste
1 tomato, chopped
1 cup chopped onion
4 cloves garlic, minced
1/2 cup chopped celery
1/2 cup chopped green bell pepper
6 cups water (I did 3 water, 3 chicken stock)
salt and pepper to taste

Chop your veggies.



Season the shrimp with Cajun seasoning to taste and set aside.


Heat the oil in a large pot over medium heat. Add the okra and saute for 30 minutes, stirring occasionally.


Add the tomato paste or a dallop of sauce (I never seem to have tomato paste on hand), tomato, onion, garlic, celery and green bell pepper and saute for 15 more minutes.


Add the water and season to taste. Bring to a boil, reduce heat to low and simmer for 45 minutes.  Add the shrimp and simmer for 20 more minutes. Finally, add the green onion to the soup and stir thoroughly.

    This recipe sounds very good. My husband is the one who cooks the shrimp in our house so I will pass this on to him. I hope he will try it soon. Now I am hungry for shrimp
