Lima Butter Beans With Salami and Tomato Sauce #Recipe

I never know whether these big old lima-like beans should be called butter beans or lima beans.  Regardless, they're delicious and we love beans around this house.  My mother has always made a similar dish but with Polish sausage.  I did not have sausage on hand so I used some smoked salami.  These turned out delicious and out entire family enjoyed the meal.  I think bacon or ham out be a good substitute, too.

I soaked dry beans overnight, then boiled them until soft in some seasoned water.


Chop some onions and meat or choice.  Or skip the meat and leave it vegetarian. I like the smoked salami flavor in the dish.


Saute onions in some olive oil, add butter beans and cook until soft.



Enjoy!  We ate this as a main dish.

    This sounds delicious! I think I am going to add it to my menu for the end of the month. Our local butcher makes an awesome smoked Kielbasa sausage that I think would be wonderful in this recipe.
