Pistachio and Blue Cheese Covered Grapes #Recipe

Sunday, September 04, 2011 Posted by Aleksandra Nearing

Several years ago while throwing a cocktail party I discovered a variation of this recipe and it has been a favorite.  The strong flavor of blue cheese masks a delicious surprise of sweet grapes.  The pistachio nuts add a nice crunch and color to the concoction.  Hope you will enjoy these as much as I do!  This is truly a simple yet elegant appetizer for your next event.

4 ounces cream cheese
4 ounces blue cheese
splash of port or red wine
red of green grapes, rinsed and completely dry
finely chopped pistachios

Chop your pistachios finely.  This is probably the most laborious part of these recipe.

Mix the cheeses and port well.  I chill this for a little while before applying to the grapes.

Grab a small clump of cheese mixture and roll around your grape until covered (about 1/8 inch will do around the grape).  Roll the cheese-covered grape around in your pile of chopped pistachios until covered.  Chill well before serving.

I was hoping you'd post this recipe! They're sophisticated but cute. I'm so clumsy, I think I might just have to modify into a dip! :)
