Roasted Garlic Bread #Recipe

I needed a nice, crust bread for a fish stew I was making. I found several and made the variation below. Turned out crusty and flavorful!

Loaf of crusty Italian bread, sliced 1 inch thick
10-14 garlic cloves, peeled
olive oil
Parmesan Reggiano shredded cheese
fresh ground pepper and salt to taste
freshly chopped basil as garnish if desired (I skipped this)



Roast your garlic in a pan of olive oil, salt and pepper until cooked through and "mushy." (yes, this is a technical cooking term)



Slice bread and spread thinly with butter.  Add more butter if you're living on the edge :)  Then smash/spread the garlic into the bread.  Finally sprinkle with cheese mixture.



Bake in 350 degree oven until ready.  Serve with your favorite stew, soup or dish.  Below it is pictured with my halibut fish stew (recipe to come).

    This dish looks gorgeous and I love those roasted-burned cloves of garlic. Delicious!
