Sausage, Mushroom, Cabbage & Potato One-Pot #Recipe

Wednesday, December 07, 2011 Posted by Aleksandra Nearing

I love easy, one pot dishes.  This is a favorite for the whole family.  If you are going for meatless, just skip the sausage and add some extra spices.

1 cup mushrooms, diced (optional, I added because ours were about to walk out the door)
1 large onion, chopped
1 pound andouille sausage, or your favorite sausage of choice (I like it a bit spicy)
1 medium cabbage, cut into 1-2 inch chunks
4-6 medium red potatoes, diced with skin on
1 jar of tomato sauce
1 small chili pepper, minced
splash of Worscheshire sauce
salt and pepper to taste

Saute your onion, seasonings and chili if using in a large stock pot.

Chop the cabbage.  It may look like a lot but it simmers down pretty well.

Dump the sausage, potatoes, cabbage, mushrooms and pasta sauce into the pot.

Simmer on medium low heat until everything is cooked through.

Serve and enjoy.  Just writing this post makes me want to make it again.

I wish I had the ingredients for this tonight -- even though it's almost eleven. It just looks like such a comforting food.

Me too, I like easy one-pot cooking or sometimes one-wok cooking :). Love all your ingredients.

I am going to make this for sure! This sounds like the perfect, filling winter meal. If you take out the potatoes, it's almost like stuffed cabbage but not stuffed. :)
